Well, let’s go back a few years for this month. Were any of you around this area in the 70s and 80s. I was, and I remember some special restaurants and the great food they had. One of those was the Kapok Tree Inn, located on McMullen-Booth Road in Clearwater. The name was taken from the ancient Kapok tree which existed on the site and exhibited lavish blooms each year.

But I didn't go there because of the tree. I went because of the corn fritters. The rest was just a side line. So here is the original recipe. I can just taste them now!

Kapok Tree Inn Corn Fritters

Ingredients:

  • 1 cup all-purpose flour, sifted

  • 1 ½ teaspoons baking powder

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1 egg

  • ¼ cup of milk

  • ½ cup whole kernel corn

  • oil for deep frying

  • some confectioners sugar

Directions:

 

  • Resift flour, baking powder, sugar and salt together.

  • Add egg, milk and corn. Stir until blended.

  • Drop batter into oil a teaspoonful at a time. Maintain oil at 350 degrees and fry until golden brown, turning once with a spoon to cook evenly.

  • Remove fritters from oil and drain on paper towel.

  • Serve piping hot on a warm platter. Sprinkle fritters with confectioners sugar just before serving.

  • Forget the calories
